Tellicherry black peppercorns from the Malabar Coast of India are considered the very best variety of black pepper. These peppercorns are left on the vine to mature longer, creating a mellow, well-rounded taste which is a bit fruity. Because they offer a more complex version of the same flavor profile, they can stand in for black peppercorns or pre-ground black pepper easily and will likely improve your enjoyment of any dish that requires black pepper. While ordinary black peppercorns do not have the citrus and woodsy notes that Tellicherry peppercorns do, they are still quite flavorful and will do a decent job as a substitute. However, you may be able to tell the difference if you have a keen palate.
Grind in your own peppermill or use where required whole. Their flavor will enhance many dishes. Add whole to soups, stews, stocks and marinades.
